I will generously leave all of the caviar, blue (fromage bleu) cheese, and champagne to the rest of the world. Sharp cheddar, however...that's different. As for freezing cheese, that's iffy. You were genero...Bleu Cheese is an acquired taste. You were generous to offer to share it with your co-workers, but I understand their reluctance to partake. Can you freeze some of the cheese to be thawed and enjoyed at a later date? I occasionally order Buffalo Chicken Wings when dining at a "sports" bar and they are usually served with crunchy celery stix and bleu cheese dressing dip. I have yet to see one trace of "bleu" in the concoction. From the taste and texture, I believe it to be chopped up bits of cream cheese (Philly?) in a pool of thinned out sour cream or Ranch dressing. Not really "bleu" at all. I wouldn't have it any other way. I don't understand the charm of that musty taste that bleu cheese seems to have. Anonymousnoreply@blogger.com
